Quat’Saisons offers guests 5 individually designed rooms in a an substantial and elegant 3-storey maison de maître typical of the Languedoc with sky-blue shutters and superb 2 acre garden, with swimming pool and vineyard. The house dates back to the 1880s and its original features are still in place: ornate balustrades, panelling and cornicing, eye-catching encaustic tiled floors and a series of flamboyant marble fireplaces. Fluffy towels, hairdryers, bathrobes, Wi-Fi, and CD players are some of the modern comforts that we also provide.

We have created a series of living spaces which stylishly marry wood block prints from Japan, thankas from Tibet, Persian carpets and Thai silks, Italian chandeliers, deco bedroom suites and 'arts & crafts' tables and chairs. Comfort and style are combined in a unique way in our rooms; we do not have minibars, TV in the rooms and melting chocolates on your pillows!

Unlike chain hotels, we really do care that you have an excellent holiday with us and we work hard on every detail. Staying here is an authentic experience in the 'real' France away from touristy hot spots and over-priced beaches. We offer advice on where to go, where to eat and what wineries to visit, indeed I am an expert on the local area. We serve breakfast, lunch and dinner on the terrace, weather permitting. We do not accept children under the age of 14 in either the rooms or the self catering apartment.

We offer excellent cuisine from produce sourced locally and quality wine from the Minervois. Our cuisine is seasonal and fresh and reflects the flavours and dishes of the South of France. We use herbs and fresh fruits picked from our own garden. We never use factory farmed or inferior ingredients, supporting instead the small local producers and farmers of France.

The Languedoc is a beautiful region of France relatively unspoilt by tourism with a sun-drenched climate. In addition to the UNESCO world heritage sites of Carcassonne and the Canal du Midi there are many other cultural attractions within easy access. To name a few, we are in the heart of 'Cathar country' with its many medieval remains, the Mediterranean cost and beaches are only a 40 minute drive away, the medieval market town of Mirepoix lies in easy reach, and the Pyrenees and Catalan Spain are both within a 90 minute drive.

Access to Le Domaine is good: by air it is only 20 minutes from Carcassonne airport with its regular flightsl and 75 minutes by motorway from Toulouse, Montpellier and Perpignan airports. By by car it is 20 minutes to the A61 motorway, by rail there are TGV services to Paris from Béziers.
